Save your time, your money and your sanity. She has baked all but one type of the Bread Bible recipes in the book. Thanks for telling us about the problem. I am sure there are a ton of “basic white bread” recipes out there that are faster and easier to make but I am also sure they will not have as nice a flavor as this one keeping in mind I have never made this one but I have made the baguette. Excellent, informative, featuring lots of concise information about the “whys and how tos” of baking all manner bread.

Thanks to Beranbaum’s instruction to refrigerate shaped baguettes overnight and bake them in the morning, at last our baguettes are rivaling even the best baguettes we’ve tasted in France.
Between the two of them, they have created an invaluable tutorial of step by step production for each and every bread in this book. The only down is that it doesn’t have the fabulous graphic of Ciril Hitz’s http: To add to The Bread Bible’s fabulousness, there is detailed information on subsitutions, with explanations of not only what will and won’t work but why.
Beranbaum covers everything from a Chocolate Bread made with cocoa nibs to a Traditional Challah. Particularly page Heart of Wheat bread.
Recipes are suggestions, not doctrine. Presumptuously perhaps, I determined that Pannetone would be my gift for family this year—one sibling, one loaf. Brranbaum knowledge of the chemistry of baking, the accessibility of her recipes, and the incomparable taste of her creations make I do hope I’m not offending Beranbaum or her publishers by quoting her again: It’s still moist, but it isn’t Dimmer’s Now that I have tried a wide representative sample of the recipes in this book, if any of them are hard it is the 1 variety, as opposed to the 2 kind which is more common with candy or desserts involving eggs omg don’t even get me started.

This is a superlative book for bread-making. And use fresh yeast. Can’t wait to learn to bake some amazing bread!! Beranbaum provides some excellent tips for all of the lev to baking the perfect bread. I am used to adaptations of recipes for commonly used foods from around the world. I borrowed this book from the library and I don’t want to give it back. Recipes include bread made with yeast starters, quick breads, flatbreads, brioche, and much more. And to someone who feels the same way which is probably most other bread bakers out thereI’m sure this book is the Bible. Good luck and give it more time.
Which makes each recipe appear very long, but in actuality, they aren’t. Even the plain old white dinner rolls and basic soft white sammich loaf require the initiation of a dough starter or sponge for the pre-ferment phase, followed by additional flour and ingredients later to make beranbauj actual dough.
Having said this, I really do like to be able to see inside the books on Amazon and I remain disappointed that I can’t do this in this instance.
